Start the New Year with a Healthy Holiday Recipes

Typically you think if something tastes good it must be fattening but that’s not necessarily the case.  There are plenty of low fat and delicious meals you can prepare for yourself, your friends and your family.  Once you start eating healthy it’s funny how you develop the taste for that over the junk food you might think you cannot live without.  Try this recipe and see if it doesn’t change your mind.

Ingredients
1/2 pound uncooked shrimp, peeled and deveined (about 32 shrimp)
2 tblsp tomato paste
1 1/2 tsp water
1/2 tsp extra-virgin olive oil
1/2 tsp minced garlic
1/2 tsp chipotle chili powder
1/2 tsp fresh oregano, chopped

Directions
Rinse the shrimp under cold running water and pat dry.  Set these aside on a plate for later. 

Whisk the tomato paste, water and oil in a small bowl for the marinade. Add the garlic, chili powder and oregano to the tomato paste and mix well.

Use a brush to spread the topping all over the shrimp. Refrigerate.

You may broil or grill the shrimp. In a remote area, away from the fire and heat, coat the grill rack or broiler pan with cooking spray then replace the rack 4 to 6 inches from the heat source.

Skewer the shrimp and place on the grill. After 3 to 4 minutes be sure to turn the shrimp. 

That’s it! Serve immediately and enjoy.
