Does Organic Make a Difference?

What does it mean when something is labeled organic and is there enough of a difference to warrant chosing organic over not?
Organic foods are grown or produced under regulated guidelines. Guidelines include that these foods are not grown with pesticides, fertilizers, sludge, radiation or additives. In the case of livestock, to be organic there must be no use of antibiotics or growth hormones.
Consumers have become more aware of what is being done to the food they eat before it reaches their table or home and have asked for stricter guidelines ensuring the quality of their food is increased. This is surely the reason for the 20% per year increase in sales of organic products even though their prices are higher than standard foods from 10 to 40%.
Organic famers do produce 20% less food but use 97% less pesticide. This pesticide is then not released into the air so although we may pay more for organic it seems like a small price to pay if we consider just the one benefit, less pesticide. Of course there are many valid reasons to chose organic which range from the environment to our health.
