Bean Salad with Balsamic Vinaigrette

This is an easy, no cook (my favorite) recipe which serves 6.

Ingredients:

Vinaigrette:

Whisk the balsamic vinegar, parsley, garlic and pepper and slowly add the olive oil, set aside.

In another bowl, combine the beans and onion. Pour the vinaigrette over the mixture and toss gently to mix well and coat evenly.

That’s it!

Per serving nutritional analysis:

Calories 270; protein 10g; total fat 11g; sodium 285mg; potassium 453mg, fiber 7g and calcium 60mg
