Bean Salad with Balsamic Vinaigrette

This is an easy, no cook (my favorite) recipe which serves 6.
Ingredients:
- 2 tbsps balsamic vinegar
- 1/3 c fresh parsley, chopped
- 4 garlic cloves, chopped
- Ground black pepper
- 1/4 c extra virgin olive oil
- 1 can (15 oz) garbanzos
- 1 can (15 oz) black beans
- 1 med red onion, chopped
- 6 lettuce leaves
- 1/2 c celery, chopped
Vinaigrette:
Whisk the balsamic vinegar, parsley, garlic and pepper and slowly add the olive oil, set aside.
In another bowl, combine the beans and onion. Pour the vinaigrette over the mixture and toss gently to mix well and coat evenly.
That’s it!
